Peanut Butter Chex Mix

Peanut Butter Chex Mix (Gluten Free/Low Sugar)

  • 9 cups Chex Mix Corn cereal
  • 2 cups Cocoa Crispies cereal
  • 1 can cashews (or peanuts)
  • ¼ cup butter
  • 1 tsp Vanilla
  • 1 cup of peanut butter
  • 3/4 cup splenda or 1 ½ cups sugar
  • Measure cereal into large bowl
  • Melt the following together: butter, peanut butter add vanilla once liquified.
  • Mix cereal, and nuts.
  • Pour melted ingredients over mix and stir until evenly coated.
  • Add Splenda or sugar.
  • Spread on waxed paper to cool. Store in airtight container or refrigerator.

Oatmeal Breakfast Bars

4 cups quick-cooking oats
1 cup packed brown sugar
1 tsp salt
1 1/2 cups chopped walnuts or pecans
1 cup flaked coconut
3/4 cup butter, melted
3/4 cup orange marmalade

Optional: fresh or dried blueberries

In a mixing bowl, combine the oats, brown sugar and salt. Stir in remaining ingredients and mix well. Press into a greased 15 x 10 x 1 inch baking pan. Bake at 425 for 15-17 minutes or until golden brown. Cool on a wire rack. Yield: about 2 1/2 dozen

After School Peanut Butter and Honey Popcorn

* 8 cups popped lightly salted popcorn (low-fat microwave popcorn is what I used)
* 1/2 cup sugar
* 1/2 cup honey
* 1/2 cup peanut butter
* 1/2 teaspoon vanilla (optional, but I totally used it!)

1. Place popcorn in a large bowl. In a small saucepan, combine sugar and honey. Bring to a rolling boil.
2. Remove from heat and stir in peanut butter until smooth. Add vanilla, if using.
3. Pour peanut butter syrup over popcorn and stir to coat. (You can place the popped popcorn in a large paper bag, then pour over the syrup and shake. That’s how I did it) Spread out on to a cookie sheet to cool for a few minutes and enjoy!

Cowboy Caviar

2 Tbsp Red wine vinegar or Seasoned Rice Vinegar
1 tsp oil
Garlic salt to taste (I like to substitute 1 – 2 cloves fresh chopped garlic)
salt & pepper to taste


2 avocados, chopped
2-3 Roma tomatoes, chopped
handful of cilantro, chopped
1 can of corn, drained
1 can of black beans, drained
1 can of chopped olives

Add the dressing to the “mix” and serve with tortilla chips! YUMMO!
