Oatmeal Breakfast Bars

4 cups quick-cooking oats
1 cup packed brown sugar
1 tsp salt
1 1/2 cups chopped walnuts or pecans
1 cup flaked coconut
3/4 cup butter, melted
3/4 cup orange marmalade

Optional: fresh or dried blueberries

In a mixing bowl, combine the oats, brown sugar and salt. Stir in remaining ingredients and mix well. Press into a greased 15 x 10 x 1 inch baking pan. Bake at 425 for 15-17 minutes or until golden brown. Cool on a wire rack. Yield: about 2 1/2 dozen

  1. Just made these with Smucker's Peach Preserves since I didn't have Marmalade on hand… Still awesome. Used almonds chopped pretty small and those were a good add too!

  2. I made these also and had a HECK of a time getting them off the cookie sheet. Next time I will use my silpat. Loved the flavor of these, big hit with the family.
