Herb Roasted Chicken

1/4 cup sage, finely chopped
2 T. parsley, finely chopped
1 T. fresh thyme, finely chopped
1 tsp salt
1/2 tsp ground pepper
1 lemon, quartered
1 onion, quartered
1 stalk of celery, cut into 2 inch pieces
5lb whole chicken
Olive Oil

Preheat oven to 425. Combine all herbs in a bowl. With breast side up, drizzle chicken with olive oil & salt. Add the herb mixture and massage into chicken & under the skin. Squeeze the lemon inside the cavity. Stuff the chicken with the onions, celery & lemon. Bake for approximately 1 hour 30 minutes, depending on the size of the chicken. If it’s less than 5lbs, decrease by 20-30 minutes. Let it rest for a few minutes before cutting into.

  1. I made this last night and it was THE best roasted chicken! The flavor was incredible & it was so juicy!!! Definitely going to be a repeat in our house!!!
