Penne Pasta with Tomatoes


5 Roma tomatoes (seeded, cut into 1/2in. pieces)
1/2 C. fresh basil, chopped
1/4 C. calamata olives, cut in 1/2 (buy the seeded ones)
1 or 2 cloves of garlic, minced
3 Tbsp. olive oil
2 Tbsp. balsamic vinegar
salt & pepper to taste

6 oz. penne pasta (uncooked)
1/4 C. feta cheese

Mix above ingredients put in bowl, cover & let set 15 min. (before adding pasta). Cook pasta, cool & toss with above ingredients. Add feta cheese right before serving. And I add pine nuts for an extra crunch (optional).
