Pesto Tortellini Salad

Pesto Tortellini Salad

1 package (9oz) uncooked refrigerated cheese-filled tortellini
1 medium zucchini, cut in half lengthwise and sliced (i substituted 2 mini cucumbers from costco – a.k.a ‘taste buddies’ and diced them)
1 cup grape or cherry tomato halves
1/3 cup mayo
1/4 prepared basil pesto (kirkland brand from costco is awesome!)
1 garlic clove, pressed
1/4 cup pine nuts or chopped walnuts, toasted

Cook tortellini according to package directions. Drain and rinse under cold water.
Meanwhile, cut zucchini/cucumber in half lengthwise and into 1/4 inch thick slices. Cut tomatoes in half. In bowl, combine mayo, pesto and pressed garlic, mix well. Add tortellini, zucchini, tomatoes and pine nuts, mix gently. Serve immediately or cover and refrigerate until ready to serve.

Yield: 12 servings
